We spent the weekend celebrating the Lunar New Year with family. For us, Lunar New Year is filled with traditions. Visiting families and friends, eating lots and lots of foods, and of course, the superstitions. But it was definitely fun, and I’m so glad that I have an extra day off this weekend to recover from my food coma!
Aren’t these sweets so cute? We used them for Lunar New Year decorations, but I think they’re better for Valentine’s Day.
It’s been super cold this winter, and so of course, the best way to stay warm, for me anyway, is with comforting soup. This winter vegetable soup is filled with ingredients that I found at the farmer’s market. The ingredients are fresh and the soup healthy.
Sometimes, I like wandering around the farmer’s market to see what’s available. There are fruits and vegetables that you don’t always find at your supermarket. So I picked up carrots with the carrot top greens still attached, parsnips, chard, and thyme. If you prefer, you can substitute the chards with kale or spinach instead.
In a medium sized pot, add olive oil and allow it to heat for a minute. Then add minced garlic and diced onions. Allow the garlic and onions to cook for a few minutes until softened and aromatic.
Add chopped carrots and parsnips to the pot, and cook them for several minutes.
Pour the vegetable broth into the pot. Then add chopped chards, carrot greens, and fresh thyme. Allow the soup to simmer until the vegetables are tender. Season the soup with salt to taste.
Serve the soup warm.

- 2-3 Swiss chards, chopped
- 1 medium parsnip, chopped

This looks delicious! We love soups over in my house. Do you think I could swap out the swiss chard and use spinach?
You can definitely swap with spinach, but add the spinach towards the end since it cooks a lot faster
