Which is nothing new, considering that I almost always have avocado in the house. You know, just in case I need it. Maybe as a topping, or part of my dip, or on my toast, or in my dessert. Oh, yes. If you haven’t had avocado as a dessert, you’re so missing out.
Avocado toast is my go to breakfast/lunch when I’m not in the mood to cook. They’re super simple to make and easy to customize too. Are you in love with the avocado toast trend as much as I am?
So many cafes and bakeries are selling avocado toast in SF. Probably where you are too. But they can cost over $7 per slice depending on where you go.
I don’t mind trying different toasts when I come across them at cafes and bakeries. But it’s definitely not in my budget to spend so much on toast on a regular basis. So, I like to be able to make my own.
This caprese avocado toast is topped with fresh simple ingredients. Tomatoes, mozzarella, basil, avocado, olive oil, and a little bit of salt. Sometimes the simplest combination of ingredients can have the most incredible flavor.
First, cut the bread into thick slices and toast them until lightly browned on both sides. I like my toast thick so that the outside is toasted and crispy but the inside is still soft.
Cut a large avocado into thin slices and remove the skin. Divide the avocado slices between the four slices of toast. I like my avocado ripe so that the slices are soft rather than hard.
Cut the grape and cherry tomatoes into quarters, cut the fresh mozzarella into bite size pieces, and roughly tear up the basil leaves. Divide all the ingredients among the four toasts.
Drizzle olive oil over the toasts. You can use your favorite olive oil. Garlic infused olive oil would work well with this caprese avocado toast. But my favorite is blood orange olive oil from Gourmet Blends (not sponsored!). I love that hint of citrus on my avocado toast. Sprinkle a pinch of salt over each of the toast.
If you like, you can drizzle your favorite balsamic vinegar over your toast too. But I really like my caprese avocado toast simple.
Serve the caprese avocado toast fresh.
