Chia seeds soaked overnight in matcha powder and vanilla almond milk until thickened into a pudding consistency. This slightly sweetened green tea chia pudding with shredded coconut and almonds is delicious and convenient as a breakfast on the go.

Hopefully it was nice and relaxing. We’ve been having summery weather the last few days and it is unusually hot, especially for San Francisco. Unfortunately, I had to work this last weekend so I couldn’t enjoy the perfect weather. I was sooo disappointed that I missed the Cherry Blossom Festival this year and the Goat Festival at the Ferry Building Farmer’s Market! I’m not always a fan of goat cheese, but I would have loved to pet and play with a goat for a few minutes.
A few weeks ago, I shared with you a simple Vanilla Chia Pudding with Granola, which I love since it takes little time to make and doesn’t require much of a cleanup. I’ve been playing with different flavors and several versions of this overnight chia pudding, which I’ll definitely share with you in the near future.
What I love most about chia pudding is that you can prepare it in about 5 minutes. You can make it while cooking dinner, or right before going to bed. It’s really up to you. Once you’re done, you can stick the jar or glass into the fridge so that the chia can thicken overnight. By morning, you can grab the jar and enjoy your breakfast on the go.
First, add chia seeds, granulated sugar, and green tea powder into a jar, or glass, or bowl. You can use whatever you want. As long as it can hold about 2 cups. Mix the dry ingredients until they are well incorporated. The reason why you want to mix first is because you want to loosen up the green tea powder. If the green tea powder is in chunks when you pour in the milk, clumps of green tea powder will form. And trust me, clumps of green tea powder is bitter.
Next, pour in just a little bit of milk to cover the chia seeds. Use a spoon to mix the ingredients until they are well incorporated and the sugar and green tea powder has dissolved.
Pour the rest of the milk into the jar and refrigerate over night.
Once the chia pudding has set, top with shredded coconut and chopped toasted almonds.
Serve the green tea chia pudding with shredded coconut and almonds.

- ¼ cup chia seeds
- 1 ½ teaspoon granulated sugar, more to taste
- 1 ½ teaspoon matcha green tea powder
- 1 cup vanilla almond milk
- Shredded coconut
- Roasted almonds
- Mix chia seeds, granulated sugar, and matcha green tea powder until they are well combined.
- Pour in a little bit of the milk just to cover the dry ingredients. Stir with a spoon to mix until the sugar and the matcha green tea powder has dissolved.
- Pour in the rest of the milk and stir to mix the chia seeds. Refrigerate the chia pudding overnight.
- Serve the chia pudding topped with shredded coconut and chopped roasted almonds.

I’d really like to try, because I’m currently obsessed with matcha, but I’m also currently off sugar. Do you think omitting the sugar will materially change the consistency?

Omitting the sugar shouldn’t change the consistency of the pudding. You can also replace the sugar with honey or agave if you prefer. Hope you like it!

I think one of the farms brought goats to the market. It’s free to play with them, but you have to reserve tickets beforehand. Maybe next year!
