Green Tea Chia Pudding with Shredded Coconut and Almonds

Chia seeds soaked overnight in matcha powder and vanilla almond milk until thickened into a pudding consistency. This slightly sweetened green tea chia pudding with shredded coconut and almonds is delicious and convenient as a breakfast on the go.
Ingredients
  • ¼ cup chia seeds
  • 1 ½ teaspoon granulated sugar, more to taste
  • 1 ½ teaspoon matcha green tea powder
  • 1 cup vanilla almond milk
  • Shredded coconut
  • Roasted almonds
Directions:
  1. Mix chia seeds, granulated sugar, and matcha green tea powder until they are well combined.
  2. Pour in a little bit of the milk just to cover the dry ingredients. Stir with a spoon to mix until the sugar and the matcha green tea powder has dissolved.
  3. Pour in the rest of the milk and stir to mix the chia seeds. Refrigerate the chia pudding overnight.
  4. Serve the chia pudding topped with shredded coconut and chopped roasted almonds.
