I feel like it was just yesterday that I announced summer arrived. And now we’re already part way through it.
The weather has been warm lately, and I want nothing but cold food to keep me feeling refresh. What better way to start your morning than with a delicious acai bowl filled with superfruits?
I absolutely love acai bowls. I’ve made so many in the past. They’re filled with nutrients and taste oh so delicious. This particular acai bowl is sweetened with strawberries and a touch tropical from the coconut water. Then it’s topped with goji berries, blueberries, and strawberries. How much more tasty can breakfast get?
And oh my god, before we even get started with this amazing acai bowl, I have to complain. I am sooo annoyed. This morning I found out that someone used my credit card information to go on a shopping spree at Walmart and Tigerdirect. And although my credit card company caught the fraudulent charges before I even noticed (yay!), now I have to go through the hassle of getting a new credit card and changing all my credit card info on all my accounts. Why do people do this?
So make sure that you check your credit card usage regularly to catch these things early. End of rant.
Acai bowls can be customized to your taste. You can add whatever fruits you like and top these bowls with crunchy granola or roasted nuts. I decided to use goji berries for my topping today. Have you had them before? You often find them in Asian desserts and soups. I bought these dried goji berries from Safeway.
Blend together frozen acai puree, fresh strawberries, and a little bit of coconut water until it forms a thick smoothie like mixture. If it’s too liquidy, you can place the acai mixture into the freezer for a little while.
Pour the acai mixture into a bowl. Top with goji berries, strawberries, and blueberries.
Serve the acai bowl cold.

- 2 packs acai puree
- ¼ cup coconut water
- ½ cup strawberries
- 2-3 sliced strawberries
- 1 ½ tablespoon dried goji berries
- ¼ cup blueberries
- Blend the acai puree with coconut water and strawberries until it forms a thick smoothie.
- Pour the acai smoothie into a bowl.
- Top with sliced strawberries, dried goji berries, and blueberries as well as any other topping you desire.
- Serve the acai bowl cold.

Where would I find acai puree? I love acai tea so I’m positive i will love this recipe!! Sort of looks like a big bowl of chocolate with fruits tossed in! I also need to look for the goji berries, I have had them as chocolate covered treats, delish!
