I love heirloom tomatoes. Those gorgeous colors. The refreshing taste. How can I resist buying them? I really can’t. I mean, look at them!

Heirloom tomatoes taste amazing on their own. And they’re best when eaten raw. So of course I want to toss them in a salad.

What I love most about this salad is that it features heirloom tomatoes as the main ingredient. Tossed with just basil, mozzarella, and a touch of balsamic vinegar, this heirloom tomato is simply yet refreshing and embodies the essence of spring.

Slice a large heirloom tomato into thick slices. Tear up basil leaves and shave the mozzarella cheese. I used a vegetable peeler to shave the mozzarella. Then drizzle good quality balsamic vinegar over the salad for a tangy taste. Or if you prefer a caprese type of salad, you can drizzle olive oil instead.

I used Black Currant Balsamic Vinegar from Gourmet Blends, but you can use whatever you like.

Ingredients
  • 1 large heirloom tomato
  • ¼ cup basil leaves, torn
  • ⅛ - ¼ cup shaved mozzarella
  • 1 tablespoon balsamic vinegar
Directions:
  1. Slice the heirloom tomatoes into thick slices.
  2. Top the heirloom tomatoes with torn basil leaves and shaved mozzarella cheese. Drizzle balsamic vinegar over the salad.
  3. Serve the salad cold.
