The last two weeks of December always passes by so quickly. And I feel so spoiled by all the extra days off. By the time the first full week of January arrives, I’m already wishing that we could rewind and repeat the holidays. Because the weeks following the holidays are always the hardest, especially when there’s no other holiday to look forward to for awhile.
So… I figured we might need a midweek pick me up. This apple cinnamon coffee cake is currently my indulgence. The cake is moist and flavorful with swirls of cinnamon and chopped apples in every bite. It’s warm and comforting and reminds me of the best parts of fall. It’s lightly sweetened and perfect for pairing with coffee or tea. You can serve this coffee cake for breakfast because I have no qualms about eating dessert for breakfast. Or you can serve it for an afternoon snack.

Preheat the oven to 350 degrees F. Lightly grease a 9×9 inch baking pan with butter or vegetable oil. Set aside for now.
In a large mixing bowl, whisk together butter, maple syrup, vanilla, buttermilk, sour cream, and eggs until smooth.
In a small bowl, add flour, baking powder, baking soda, and salt, mix until just combined.
Pour the dry ingredients into the wet ingredients and mix until just combined. Then gently fold in the chopped apples mixed with cinnamon.
Transfer the batter in the prepared baking pan.
In a small bowl, add all purpose flour, brown sugar, ground cinnamon, and butter. Mix together with your hands until a crumbly mixture forms.
Evenly sprinkle the streusel over the batter. Transfer to the oven bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. ‘
Serve warm or at room temperature with your favorite coffee or tea.
