I know this past week has been super stressful for everyone. Let’s be real. This entire year has been stressful. But we’ll get through it. In the mean time, we’re living each day the best way that we can.
If you’re like me, I kind of like my comfort food to cope with stress. For some people, it’s stress baking. I hear butter has been in high demand this past couple weeks. For some people, it’s indulging in ice cream and other desserts. For me, it’s whatever I’m craving at that moment.
There’s not one comfort food that I always go to. It just depends on what kind of mood I’m in.
Currently? It’s this spinach mushroom grilled cheese.
My boyfriend and I were pantry cooking a few weeks ago, and we made quesadillas filled with mushrooms, spinach, and cheese. And somehow, something so simple was just absolutely delicious. And so I thought, maybe we can turn that idea into a grilled cheese. And that’s exactly what I did.
A few things. Grilled cheese sandwiches are amazing with brie. They melt fast and the flavor is simply delicious. Also, if you haven’t had grilled cheese drizzled with honey. You seriously need it in your life ASAP. And if you haven’t added a pinch of flaky sea salt to that drizzle of honey? You are missing out.
So do yourself a favor and try this spinach mushroom grilled cheese.
In a medium sized skillet, add olive oil over low to medium heat. Once the olive oil has heated, add mushrooms to the skillet and cook for several minutes until the mushrooms have become tender. Next, add spinach leaves to the skillet. Cook for a couple minutes until the leaves have wilted. Remove the skillet from heat. If liquid formed, pour out the liquid. You want the spinach and mushroom to be as dry as possible before they are added to the grilled cheese. Set aside for now.
On slices of bread, place thinly sliced brie on top. Next add the spinach mushroom mixture over the cheese. Add more brie slices on top and then another slice of bread.
You can make about 4 sandwiches with this spinach mushroom mixture.
Add about a tablespoon of butter over low to medium heat to a medium or large skillet. Once the butter is hot, add the sandwiches and allow it cool for about 3-4 minutes on each side until the bread is browned and the cheese has melted.
Serve the spinach mushroom grilled cheese with a drizzle of honey and a sprinkle of flaky sea salt.
