Spinach Mushroom Grilled Cheese

Grilled brie cheese sandwich filled with spinach and mushrooms then drizzled with honey and a sprinkle of sea salt. This spinach mushroom grilled cheese is simple, delicious, and the perfect comfort food.
Ingredients
  • 1 tablespoon olive oil
  • 2 cups sliced mushrooms
  • 3 cups baby spinach
  • 8 oz brie
  • 8 slices of bread
  • Honey for drizzling
  • Sea salt for topping
  • Thyme for garnish
Directions:
  1. In a medium sized skillet, add olive oil over low to medium heat. Once the olive oil has heated, add mushrooms to the skillet and cook for several minutes until the mushrooms have become tender. Next, add spinach leaves to the skillet. Cook for a couple minutes until the leaves have wilted. Remove the skillet from heat. If liquid formed, pour out the liquid. You want the spinach and mushroom to be as dry as possible before they are added to the grilled cheese. Set aside for now.
  2. On slices of bread, place thinly sliced brie on top. Next add the spinach mushroom mixture over the cheese. Add more brie slices on top and then another slice of bread.
  3. Add about a tablespoon of butter over low to medium heat to a medium or large skillet. Once the butter is hot, add the sandwiches and allow it cool for about 3-4 minutes on each side until the bread is browned and the cheese has melted.
  4. Serve the spinach mushroom grilled cheese with a drizzle of honey and a sprinkle of flaky sea salt.
