I hope you had a wonderful 4th of July weekend filled with lots of good eats and sunshine. It’s not the typical holiday weekend. But definitely making the best of it. I think what I miss most is traveling during long weekends. We were in Seattle last year exploring a city I had never been to before and finding places to eat. This year, not so much. lol

In the mean time, let’s talk about this banana cake.

For weeks, while sheltering in place, I was making all sorts of banana bread. It was because we always had overripe bananas waiting to be used. There were always three or four sitting on the counter. And if there’s overripe bananas, then there’s going to be banana bread. But then, I discovered banana cake. And once I tasted that, there’s no going back. Because it’s that good.

This banana cake is super moist. Don’t you hate it when you make banana bread and it comes out a little dry and dense? This banana cake tastes like cake with all the flavors of sweet bananas. You can serve it by itself. Or you can top it with an easy to make nutella buttercream frosting. Then suddenly this banana cake is perfect for all occasions. So good.

Preheat the oven to 350F. Lightly grease a 9x13inch baking pan with nonstick cooking spray or olive oil. Set aside for now.

In a small bowl, whisk together flour, baking soda, ground cinnamon, nutmeg, and salt until combined. Set aside for now.

In a medium sized bowl, beat together butter, granulated sugar, and brown sugar until light and fluffy. Then beat in eggs and vanilla extract. Then add mashed bananas and Greek yogurt, and beat until well combined.

Add the dry ingredients to the wet ingredients. And mix until just combined.

Pour the banana cake batter into the prepared baking pan. Bake the banana cake for 28-30 minutes until the edges and top turn lightly browned. Insert a toothpick into the center of the cake. If the toothpick comes out clean, the cake is done.

Let the banana cake cool for several minutes before slicing.

To make the nutella buttercream frosting, use a hand mixer to beat the butter, powdered sugar, Nutella, milk, and vanilla extract together until smooth and creamy.

Use a spatula to spread the nutella buttercream frosting over the banana cake. You can either slice the banana cake prior to spreading the frosting on top or spread the frosting onto each individual slice.

Banana Cake
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon salt
