This past week has felt extra long for me. It’s the first official week back at work since March, and it was harrrd. I have not felt as exhausted as I have in the last four days, not in a long time. I think a combination of everything that has happened just took its toll. I work in the dental world, and it is not the same as it was when I left in March. It’s much harder, more stressful, and so very exhausting. And I can’t wait until I can find that balance again.

Right now though? I’m so ready to just sleep late into the morning and spend the day lounging until the new week starts again. Oh, and of course, cook and eat. How could I forget? Lol

I made churros for the first time yesterday! And discovered that I love cinnamon sugar churros drizzled with condensed milk. If you haven’t tried it that way, I highly suggest that you do. Otherwise, you’re missing out!

In the mean time, I’m sharing with you this kimchi spam fried rice.

All I’ve been doing for weeks is pantry cooking, and this kimchi spam fried rice is one of my favorites. It’s simple, delicious, and packed full of flavor.

I’ve been missing going out for Korean food, and this Korean inspired fried rice really helps satisfy those cravings. Fried rice packed full of flavor from the juices of kimchi, the salty savoriness of spam, and to top it off? The fried egg. Especially when it’s still runny.

In a large cast iron skillet, add a little bit of vegetable oil over low to medium heat. Once the vegetable oil is hot, add diced spam. Cook for several minutes until the spam is browned and crispy on the edges. Place the spam and a paper towel lined plate. The paper towel will help drain the oil. Set aside for now.

In the same skillet with the same vegetable oil used to cook spam, add minced garlic and diced onions. Cook for a few minutes until the onions have softened.

Next, add kimchi to the skillet. Cook for several minutes on high heat until the kimchi has started to dry and become crispy on the edges.

Now, add leftover rice to the skillet. You want to use day old rice. And it’s best if the rice has been in the refrigerator. This helps dry out the rice, which makes the best fried rice.

Pour in the kimchi juice and mix until all the rice is covered in the kimchi juice.

Add the spam back into the skillet with chopped chives and stir to incorporate all the ingredients. Once all the ingredients are warmed through, remove the cast iron skillet from heat.

Serve the kimchi spam fried rice topped with a fried egg or two.

Ingredients
  • 2 tablespoons vegetable oil
  • 1½ cups diced spam
  • 2 cloves of garlic, minced
  • ½ onion, diced
  • 1½ cups sliced kimchi
  • ⅛ - ¼ cup kimchi juice
  • 1½ cups leftover cooked rice, refrigerated
  • ¼ cup sliced chives

  • 2 fried eggs
  • Salt to taste, as needed
