Fried rice with kimchi, onions, garlic, and diced spam topped with a fried egg. This kimchi spam fried rice is simple, delicious, and perfect for pantry cooking.
Ingredients
2 tablespoons vegetable oil
1½ cups diced spam
2 cloves of garlic, minced
½ onion, diced
1½ cups sliced kimchi
⅛ - ¼ cup kimchi juice
1½ cups leftover cooked rice, refrigerated
¼ cup sliced chives
Toppings
2 fried eggs
Salt to taste, as needed
Directions:
In a large cast iron skillet, add a little bit of vegetable oil over low to medium heat. Once the vegetable oil is hot, add diced spam. Cook for several minutes until the spam is browned and crispy on the edges. Place the spam and a paper towel lined plate. The paper towel will help drain the oil. Set aside for now.
In the same skillet with the same vegetable oil used to cook spam, add minced garlic and diced onions. Cook for a few minutes until the onions have softened.
Next, add kimchi to the skillet. Cook for several minutes on high heat until the kimchi has started to dry and become crispy on the edges.
Now, add leftover rice to the skillet. You want to use day old rice. And it’s best if the rice has been in the refrigerator. This helps dry out the rice, which makes the best fried rice.
Pour in the kimchi juice and mix until all the rice is covered in the kimchi juice.
Add the spam back into the skillet with chopped chives and stir to incorporate all the ingredients. Once all the ingredients are warmed through, remove the cast iron skillet from heat.
Serve the kimchi spam fried rice topped with a fried egg or two.
