This Mother’s Day is looking a little different compared to previous years. Some of us are still sheltering in place and not able to celebrate with our moms. Restaurants are not open for dining in. It’s definitely a different feel than what we’re all used to.
But I have one last minute recipe just in case you need a homemade gift for Mother’s Day. Or let’s be honest, it’s perfect as a treat for you and me too.
I’m sure you’ve been baking a ton of banana breads in the past few weeks, and I love that too. Banana bread especially with walnuts is a classic and it is so tasty. It’s moist and lightly sweetened. It has a hint of cinnamon and nuttiness.
But for this one, I wanted the banana bread to be a little bit more decadent. A little more special. So I swirled Nutella into the batter.
We all deserve a little treat, especially while we’re sheltering in place. We’ve had our worries, we’ve had our stresses, and I think a little treat would be perfect for a pick me up.
Plus bananas and Nutella? Seriously one of my favorite combinations ever.
Preheat the oven to 350F. Lightly grease a 9x5inch loaf pan with nonstick cooking spray or vegetable oil. Set the prepared loaf pan aside for now.
In a medium mixing bowl, mash the ripe bananas with either a spatula or a fork. Add vegetable oil, brown sugar, eggs, and vanilla extract. Mix until all the ingredients are well incorporated.
In a small bowl, whisk together flour, baking soda, and ground cinnamon.
Pour the dry ingredients into the wet ingredients and mix until all the ingredients are well incorporated.
Pour the banana bread batter into the prepared loaf pan. Add dollops of Nutella onto the banana bread batter. Then use a knife to swirl the Nutella into the batter.
Bake the banana Nutella bread in the oven for 30 minutes. Remove the loaf pan from the oven and cover with a foil to prevent the banana bread from browning too quickly. Bake the banana Nutella bread for an additional 20-25 minutes.
Check the readiness of the bread by inserting a toothpick through the center. If the toothpick comes out mostly clean, the banana nutella bread is ready. Let the bread sit for at least 10 minutes to cool before slicing into it.
Serve the banana nutella bread warm or cold.
