This past week I’ve been testing single serving cookies in a mini skillet for those who are sheltering in place alone and want a little treat without having to make an entire batch of cookies. I was also testing in a toaster oven instead of a regular oven in case that’s all you have on hand. That will be up soon. I also tested a recipe for Chinese green onion pancakes, which we had three days in a row because they were that good. And lastly, we watched most of Tiger King on Netflix, and I suddenly feel like I’ve been sheltered my whole life. Lol.

Today I wanted to share with you another brand new recipe with simple ingredients that you’re most likely to already have in your freezer, fridge, or pantry. Large shrimp, homemade honey chipotle sauce, roasted vegetables tossed in fajita seasoning, a warm bowl of rice. Amazing individually but when served together? Sooo good.
I am very partial to honey chipotle because the flavor is so strong, and you don’t need to do much with it. You can easily use it to marinade chicken or shrimp. And it would be ready in very little time. It’s perfect for this dish.
The fajita vegetables are mostly things that you can find in the pantry. Bell peppers, onions. I tore up the mushroom for this recipe instead of slicing to give it more edges and more surfaces to roast. That way the edges can crisp up a little more.
Honey chipotle shrimp, fajita vegetables, rice. And you have an amazing meal that doesn’t take long to put together. I hope you’ll enjoy this as much as I did.
Preheat the oven to 400F. Lightly grease a baking sheet with olive oil. Set aside for now.
In a small bowl, mix together shrimp, chopped chipotle pepper, adobo sauce, and honey. Set aside and let the shrimp marinade for about ten minutes.
In a medium sized bowl, add sliced red bell pepper and green bell pepper, sliced onions, roughly torn mushrooms, chipotle chili pepper powder, paprika, dried oregano, garlic powder, pinch of salt and pepper, and olive oil. Toss until all the ingredients are well combined.
Place the fajita seasoned vegetables in a single layer on the baking sheet. Roast the veggies for about 10-15 minutes until cooked and browned.
While the fajita vegetables are roasting, cook the shrimp in a medium sized skillet over medium heat for about several minutes until the shrimp turn from a grayish color to a solid orange color.
Once the fajita vegetables are ready, serve with the honey chipotle shrimp. The honey chipotle shrimp with fajita vegetables can be served by themselves or over rice.

- 2 dozen large shrimp
- 2 tablespoons olive oil
- 2-3 chipotle peppers in adobo sauce
- 2 tablespoons adobo sauce
- 1 tablespoon honey
- ½ large red bell pepper, sliced with seeds removed
- ½ large green bell pepper, sliced with seeds removed
- ½ medium onion, sliced
- 2 cups roughly torn mushrooms
- ½ tablespoon chipotle chili pepper powder
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- ¼ teaspoon garlic powder
- Salt and pepper
- 2 tablespoons olive oil
- Rice
- Finely chopped Parsley for garnish

In isolation, I have working out a lot and catching up on tasks that I have been behind on. So I have cleaned my house, done my taxes, working on online continuing education.
