I have to confess that this week has been a little difficult. Without a regular routine, and without deadlines, I feel like I have trouble getting motivated to do things. So for this next week, I’m planning my days so that I have goals to meet each day and hopefully I’ll be a little more productive.
To keep myself entertained, in case you need ideas, I’ve been browsing through cookbooks and food magazines that I haven’t had time to look through. I’ve been catching up on my reading. I’m just about to start Karen Rose’s Into the Dark. If you’re into crime mysteries, her books are a must. And I’m currently obsessed with the Crime Junkie podcast and the Teach Me Something New podcast.
In the mean time, I thought we could use a new baking project.
We’ve had some ripe bananas sitting around so of course, ripe bananas = banana bread. Because it’s the easiest way to use up super ripe bananas. Lately, baking and cooking has been pretty therapeutic for me. It’s so relaxing to make, especially with so much time on my hands. All the time in the world to perfect the recipe before sharing with you guys. <3
This banana bread is one of my youngest sister’s favorites. We actually worked on this recipe together. It’s filled with ripe bananas and chunks of chocolate. All of which we already had in our pantry. These chunks of chocolate melt into the banana bread so it becomes rich and chocolatey too. My kind of comfort food. It’s perfect for breakfast and as afternoon snack. And it took barely two days for the bread to disappear completely.
Each bite you get both the flavor of the banana and the melted chocolate. Which is the perfect combination for either breakfast or a quick snack. And it doesn’t take much time or effort.
Preheat the oven to 350F. Lightly grease a 9×5 inch loaf pan with nonstick cooking spray or olive oil. Set the prepared loaf pan aside for now.
In a medium mixing bowl, mash the ripe bananas with either a spatula or a fork. Add olive oil, brown sugar, eggs, and vanilla extract. Mix until all the ingredients are well incorporated.
In a small bowl, whisk together flour, baking soda, and ground cinnamon.
Pour the dry ingredients into the wet ingredients and mix until all the ingredients are well incorporated. Fold in the semi sweet chocolate chunks. Reserve some of the chocolate chunks to sprinkle on top of the batter.
Pour the banana bread batter into the prepared loaf pan. Add the rest of the chocolate chunks on top.
Bake the chocolate chunk banana bread in the oven for 30 minutes. Remove the loaf pan from the oven and cover with a foil to prevent the banana bread from browning too quickly. Bake the chocolate chunk banana bread for an additional 20-25 minutes.
Check the readiness of the bread by inserting a toothpick through the center. If the toothpick comes out mostly clean, the chocolate chunk banana bread is ready. Let the bread sit for at least 10 minutes to cool before slicing into it.
Serve the chocolate chunk banana bread warm or cold.

By coincidence, I just popped three banana breads into the oven. Being confined to the house, I have been doing an unhealthy amount of baking. I am convincing myself, however, that I am avoiding potential food waste by cooking with bananas that are past their best.

I’ve done chocolate chips, espresso powder, nuts, Nutella. And I plan to do cinnamon swirls sometime in the future. lol
