Chocolate Chunk Banana Bread

Banana bread filled with chunks of melted chocolate and a hint of cinnamon in every bite. This chocolate chunk banana bread is easy to make, delicious, and perfect for using up pantry ingredients.
Ingredients
  • 3 medium sized very ripe bananas
  • ¼ cup olive oil
  • ⅓ cup brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1½ cups all purpose flour
  • 1½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • 1 cup semi sweet chocolate chunks
Directions:
  1. Preheat the oven to 350F. Lightly grease a 9x5 inch loaf pan with nonstick cooking spray or olive oil. Set the prepared loaf pan aside for now.
  2. In a medium mixing bowl, mash the ripe bananas with either a spatula or a fork. Add olive oil, brown sugar, eggs, and vanilla extract. Mix until all the ingredients are well incorporated.
  3. In a small bowl, whisk together flour, baking soda, and ground cinnamon.
  4. Pour the dry ingredients into the wet ingredients and mix until all the ingredients are well incorporated. Fold in the semi sweet chocolate chunks. Reserve some of the chocolate chunks to sprinkle on top of the batter.
  5. Pour the banana bread batter into the prepared loaf pan. Add the rest of the chocolate chunks on top.
  6. Bake the chocolate chunk banana bread in the oven for 30 minutes. Remove the loaf pan from the oven and cover with a foil to prevent the banana bread from browning too quickly. Bake the chocolate chunk banana bread for an additional 20-25 minutes.
  7. Check the readiness of the bread by inserting a toothpick through the center. If the toothpick comes out mostly clean, the chocolate chunk banana bread is ready. Let the bread sit for at least 10 minutes to cool before slicing into it.
  8. Serve the chocolate chunk banana bread warm or cold.
