It was another busy weekend for me. Yesterday was Lunar New Year so I was with family celebrating and eating lots of food. But honestly, what’s new? Lol. We’re always finding reasons to celebrate. And well, to eat. Lol.

In the mean time, let’s talk about this chai spiced apple loaf cake.

It’s no secret that I have a love for loaf cake. They’re so easy to make, they’re easy to customize, and since they’re baked in a loaf pan, it’s easy to clean up. If you haven’t noticed yet, I’m not a fan of cleaning up muffin tins. It has to be really worth it for me to bake in a muffin tin, like mochi muffins worth it. Because there’s so many wells to clean after the baking is done.

I’ve been wanting to make a chai spiced loaf cake for awhile now. And chai spiced loaf cake with sweet and tart diced apples sounded like the perfect combination of flavors to me. I could just picture myself waking up in the morning and packing a slice of this loaf cake for breakfast. Pair it with hot tea or a mug of freshly brewed coffee, and you are set for breakfast.

This chai spiced apple loaf cake has swirls of chai spiced sugar in its center. Each bite is filled with the taste of sweet and tart apples and warm notes of chai spices. This loaf cake is moist, flavorful, and so delicious.

Preheat the oven to 350F. Lightly grease a 9×5 inch baking pan with nonstick cooking spray or vegetable oil. Set aside for now.

In a large mixing bowl, combine all purpose flour with baking soda.

In a medium mixing bowl, whisk together egg with brown sugar and granulated sugar. Whisk in whole milk, vanilla extract, and vegetable oil until combined.

Pour the wet ingredients into the dry ingredients, and mix until just combined.

Pour half of the batter into the loaf pan.

 

In a small bowl, whisk together cinnamon, brown sugar, nutmeg, all spice, ginger, and cardamom. Add diced apple to the bowl and mix until the apples are coated in the chai spiced sugar. Add the chai spiced apples to the loaf pan. Then pour the rest of the batter into the pan.

Use a knife to swirl the batter so that chai spiced apples are mixed into the batter.

Bake the chai spiced apple loaf cake in the oven for about 45-50 minutes. Insert a toothpick into the center. If the toothpick comes out clean, it is ready. Allow the bread to cool for several minutes before slicing.
