Chai Spiced Apple Loaf Cake

Loaf cake baked with swirls of apple, cinnamon, and chai spices. This chai spiced apple loaf cake is delicious and so perfect for breakfast.
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 large egg
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 cup whole milk
  • ⅓ cup vegetable oil
  • 1½ teaspoon vanilla extract

  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • ½ teaspoon ground ginger
  • 1/ teaspoon cardamom
  • 1 cup diced apples
  1. Preheat the oven to 350F. Lightly grease a 9x5 inch baking pan with nonstick cooking spray or vegetable oil. Set aside for now.
  2. In a large mixing bowl, combine all purpose flour with baking soda.
  3. In a medium mixing bowl, whisk together egg with brown sugar and granulated sugar. Whisk in whole milk, vanilla extract, and vegetable oil until combined.
  4. Pour the wet ingredients into the dry ingredients, and mix until just combined.
  5. Pour half of the batter into the loaf pan.
  6. In a small bowl, whisk together cinnamon, brown sugar, nutmeg, all spice, ginger, and cardamom. Add diced apple to the bowl and mix until the apples are coated in the chai spiced sugar. Add the chai spiced apples to the loaf pan. Then pour the rest of the batter into the pan.
  7. Use a knife to swirl the batter so that chai spiced apples are mixed into the batter.
  8. Bake the chai spiced apple loaf cake in the oven for about 45-50 minutes. Insert a toothpick into the center. If the toothpick comes out clean, it is ready. Allow the bread to cool for several minutes before slicing.
  9. Serve the chai spiced apple loaf cake warm or cool.
