There’s less than two weeks left until Thanksgiving. I feel like there’s still so much to do and so much to plan. You would think that after years of doing this, we’d all have it down by now. But nope. Every year, it feels the same. That last minute rush to get everything together.

I don’t know about you, but leading up to Thanksgiving day, I am constantly busy. Planning the dishes, making a shopping list, buying the groceries, and of course, the prepping and cooking. For me, timing is super important.

And while doing all the Thanksgiving planning, shopping, and prepping, there’s really almost no time to sit and eat. So I personally like to have baked goods on hand, something I can easily grab and eat while I’m working on prepping and cooking.

These peanut butter chocolate chip cookies might just be the answer. They are super easy to make and soo delicious. In all honesty, I’m not always a fan of peanut butter things. I loooove peanut butter and can eat it by the spoonful. But peanut butter baked goodies and peanut butter chocolate? I’m super picky about them. Mostly because so many peanut butter cookies and candies out there just don’t taste like peanut butter. It tastes like peanut butter flavored things, but not of actual peanut butter. But these cookies? It’s all real peanut butter.

Soft and chewy cookies filled with peanut butter and chocolate chip in every single bite. I mean…. does it get better than that? Especially if you’re a fan of both peanut butter and chocolate? Definitely not.

Preheat the oven to 350F. Line a baking sheet with parchment paper or nonstick cooking spray. Set aside for now.

In a medium mixing bowl, beat together butter, peanut butter, brown sugar, and granulated sugar until blended and mostly smooth. Next, add an egg and vanilla extract and mix until incorporated.

Sprinkle flour, baking powder, and baking soda over the dough and mix until combined.

Add chocolate chip to the cookie dough and mix until combined.

Use a cookie scooper to evenly divide the cookie dough into dough balls. About 1- 1 1/2 tablespoons each. You’ll make about 16-18 cookies.

 

Evenly space the cookie dough balls on the baking sheet.

Bake for about 10-11 minutes until the edges are browned but the center is still soft

Allow the cookies to cool for a minute or two on the baking sheet before transferring to a wire rack to cool.

Serve the peanut butter chocolate chip cookies warm.

  • ⅓ cup peanut butter
  • ¾ cup brown sugar
  • 2 tablespoons granulated sugar
