I cannot believe that it’s already the first day of July! And that I’m just a couple days away from vacation. I honestly cannot wait!
You guys if you have food recommendations for Seattle, I would love it if you send it to me. We’re heading to Seattle on Wednesday and I can’t wait to try so many places, especially some of the seafood restaurants and the places at Pike’s Market Place.
I made a reservation for Needle and Thread, a speakeasy style bar. There are no drink menus at this bar. The bartenders are supposed to customize each of our drinks based on our flavor profile. And even though I don’t really drink, the idea of a cocktail designed specifically for you sounds intriguing.
In the mean time, as I’m finishing up my plans for my Seattle trip, I wanted to share this cinnamon spiced overnight chia pudding with you.
Simple ingredients with just a hint of cinnamon and vanilla, this chia pudding is delicious and so refreshing. It’s the kind of breakfast I’m looking for during warm summer days. It’s light and takes so little time to prepare.
Topped with granola and fresh strawberries, and you have a breakfast perfect for on the go.
In a medium sized jar, add chia seeds, ground cinnamon, vanilla extract, vanilla almond milk, and maple syrup. Use a spoon to stir until all the seeds have dispersed. Refrigerate the chia seed mixture overnight so that the chia seeds can thicken.
Serve the cinnamon spiced overnight chia pudding topped with strawberries and granola.

- 1½ cup almond milk
- 2 -3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- ⅛ teaspoon ground cinnamon, more to taste
