Counting down the days until Thanksgiving. Which means it’s time for Thanksgiving sides. My favorite part of Thanksgiving dinner. Have you already started planning your Thanksgiving menu? If you haven’t, I think it’s time to start.

Find the recipes to those dishes that you want to make. Create a grocery shopping list for all the items that you need. And make that shopping trip this week. Or over the weekend. Don’t wait until next Wednesday to make those last minute purchases. Because take it from me who forgets something every year, the shelves will be empty and those lines are ridiculous. Even worse, when you need something the morning of.

So… let’s keep it as simple as possible with these mashed potatoes.

Mashed potatoes are a staple in our family. It’s my youngest sister’s favorite dish. So of course, we always have it. But this year, I thought we could the classic mashed potatoes to the next level with garlic and a little smoky heat.

These mashed potatoes are creamy and garlicky on it’s own. But with smoky chipotle butter, suddenly the classic dish we all know and love has an extra little kick.

Still super easy to make with very little hassle and perfect for a day of so much prep and cooking.

Place all the potatoes and cloves of garlic into a large saucepan. Fill the pot with water until it covers the potatoes by about 2 inches. Let the water come to a boil on high heat. Then lower the heat to medium and simmer until the potatoes are tender, about 15-20 minutes. Drain the potatoes, and then mash the potatoes. Add butter, milk, and salt. Stir until well combined. Transfer the potatoes to a serving bowl.

In a small pot, add butter, paprika, chipotle pepper, and salt. Cook for a couple minutes until the butter has melted and the chipotle pepper is mashed.

Serve the mashed garlic potato with chipotle butter.

Ingredients
  • 3 pounds russet potatoes, peeled and cubed
  • 6 medium cloves of garlic, peeled
  • 2 tablespoons butter
  • ¼ cup whole milk
  • 1½ teaspoons salt
Chipotle butter
  • 3 tablespoons butter
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • 1 chipotle pepper in adobo sauce
Directions:

    thinking about keeping things simple since i might be alone. a neighbor suggested a cornish hen, adding my thots to a sweet potato, green beans, and with the bread i have in the freezer, cranberry sauce. and getting some flavored butter or cheese at the store, and dessert is a dark chocolate bar. with strawberry milk.
