Garlicky mashed potatoes drizzled with smoky chipotle butter. This mashed garlic potato with chipotle butter is simple to make and perfect as a Thanksgiving side.
Ingredients
3 pounds russet potatoes, peeled and cubed
6 medium cloves of garlic, peeled
2 tablespoons butter
¼ cup whole milk
1½ teaspoons salt
Chipotle butter
3 tablespoons butter
1 teaspoon paprika
½ teaspoon salt
1 chipotle pepper in adobo sauce
Directions:
Place all the potatoes and cloves of garlic into a large saucepan. Fill the pot with water until it covers the potatoes by about 2 inches. Let the water come to a boil on high heat. Then lower the heat to medium and simmer until the potatoes are tender, about 15-20 minutes. Drain the potatoes, and then mash the potatoes. Add butter, milk, and salt. Stir until well combined. Transfer the potatoes to a serving bowl.
In a small pot, add butter, paprika, chipotle pepper, and salt. Cook for a couple minutes until the butter has melted and the chipotle pepper is mashed.
Serve the mashed garlic potato with chipotle butter.
