It’s been awhile since I’ve shared grain bowls with you so I thought this would be the perfect time. I don’t know if you know this, but I love bowl foods. I think it’s just the idea of all these amazing ingredients with different flavors in one bowl. Every bite is flavorful and has a different texture. It makes my meal so much more fun.
I use a mix of wild rice, quinoa, and brown rice for my grains. But use whatever works for you. Mix the cooked mixed grains with the roasted veggies, the mixed greens, and the shredded honey chipotle chicken. Now drizzle that honey balsamic vinaigrette on top to tie the entire bowl together. It is sooo good.
There are so many fresh produce available at the farmer’s market so any veggies or mixed greens that you like can definitely be substituted. Make use of all those fresh summer produce while they’re still available.
Then you can serve this dish right away or you can pack them up into a container and bring it with you for lunch. Which I honestly love to do because the grains and veggies have soaked up all of that vinaigrette overnight.

I like eating this way too, but my grain of choice by far is red cargo rice, which I like equally well hot or cold.
