Did you guys catch the Royal Wedding yesterday? I woke up early to watch the arrival of the family and to get the first looking of the wedding dress. To be honest, I was a little disappointed that the wedding dress was so simple, but Meghan Markle looked amazing regardless. And did you get a chance to watch Bishop Michael Curry’s sermon? I thought it was really powerful and inspiring. And of course, the Kingdom Choir sounded so good. Don’t you just love weddings?

I just wished I didn’t have work, especially after getting up at 3:45 in the morning to watch the wedding. So I’m completely exhausted and would love to sleep in on my Sunday off. Except that’s not really what I have planned. I bought tickets a few weeks ago for both me and my sister for SF Matcha Fest. Can’t wait to share photos of the food we try! Obviously. =)

I’ve been obsessed with matcha green tea lately. Can you tell? Maybe that stems from my excitement over Matcha Fest. I really have no idea. But be prepared to see more matcha green tea recipes coming your way.

I feel like I need to explain what matcha is for those of you who are not familiar with it. In SF, it’s kind of a trend. Lol. One that I was into long before it became trendy. Matcha is a form of green tea that has been grounded up into powder. It can be used for flavoring desserts, which I love to do. Or you can mix with water or milk to create a paste for drinking.

For those of you who want to know what matcha powder I use, I always buy the culinary quality Maeda-En Matcha Green Tea Powder. Hopefully that helps!

For this matcha green tea croissant french toast bake, I used leftover croissants and tore them into bite size pieces. I only have extra croissants when I buy in bulk from Costco. Otherwise, I never really have leftover croissants. I whisked together eggs, vanilla extract, sugar, matcha powder, and milk until combined. Then I coated the croissant pieces in this egg mixture.

The result?

The inside of the croissant french toast bake is custardy and the top is crispy. Lightly dusted with matcha powder and powdered sugar, then served with condensed milk or maple syrup, this matcha green tea croissant french toast bake is simply amazing. I think you will love it as much as I do!

Preheat the oven to 350F. Lightly grease a 9 inch pie dish with nonstick cooking spray.

In a medium sized bowl, add a little bit of milk and matcha green tea powder. Whisk until a paste forms and doesn’t appear powdery. Add eggs, granulated sugar, vanilla extract, and the rest of the milk. Then whisk until well combined.

Tear up croissants into bite size pieces and then add them to the mixing bowl. Mix the croissant pieces with the matcha egg mixture until all the croissants are well coated.

Pour the coated croissants into the prepared pie dish, and bake for about 25-30 minutes until the tops have browned. Allow the matcha green tea croissant french toast bake to cool for a few minutes before sifting matcha green tea powder and powdered sugar on top.

  • 1 cup vanilla almond milk
  • 3 large eggs, cracked and beatened
  • 1 tablespoon vanilla extract

  • 4 large croissants, torn up into bite size pieces
For serving
  • Matcha Powder
  • Powdered Sugar
  • Condensed Milk
  • Maple Syrup

    I was up at 4 to watch the wedding, and I loved it. This looks really interesting, I love French toast (although I don’t indulge in it often) so maybe I’ll give this a try sometime.
