Weekend brunch = all sorts of mimosas.

One of the fun things about weekend brunch is that there are so many different dishes to try and so many cocktails you can have with your mid morning breakfast.

I absolutely love mimosas because they’re so easy to make and you can customize it however you like. Think DIY mimosa bars with all sorts of juices.

In this particular version, I used pomegranate juice and fancied it up with mint leaves and crushed ice. Not a traditional mimosa, but it’s so so good.

As usual, you can always add more champagne or more juice depending on your preference. I prefer mine with more juice than alcohol. While I used store bought pomegranate juice for this recipe, my grandma used to make fresh pomegranate juice using the huge pomegranates growing on the tree in her backyard. She would create her own pomegranate wine and have a small glass most days with her dinner.

This version of pomegranate mint mimosa is inspired my grandma’s love for her pomegranate wine. It’s just a little fancied up. Now, you’ll have an excuse to have bubblies with your weekend brunch.

Pomegranate Mint Mimosas | Cooking with a Wallflower

If you like a more minty drink, add fresh mint leaves to your pomegranate juice and refrigerate for an hour or two so that the mint infuses with the pomegranate juice.

Pour the pomegranate juice into a small glass or a mason jar. When ready to serve, pour chilled champagne over the pomegranate juice. Top with crushed ice and with fresh mint leaves.

Serve the pomegranate mint mimosas chilled.

If you’re serving a group of family and friends, you can easily make this pomegranate mint mimosa in large proportions. Just start with a 1:1 ratio and adjust the champagne and juice to your preferences.

Ingredients
  • ½ - ¾ cup chilled pomegranate juice
  • ½ cup chilled champagne
  • Crushed ice
  • Mint leaves for garnish

    I don’t often get to try your recipes soon after you post them, but it was a perfect morning for mimosas here and we happen to be within walking distance of our grocery store, so…. Delicious. Maybe dangerously good.
