I’m not really into creating new year’s resolutions, but I like to set goals for each new year. Nothing too crazy but always something that I’d enjoy trying to achieve. This year? Just traveling more. And those plans are already being set in motion. =)

I thought we could all welcome the new year with apple cider mimosas! Because the new year starts on a Sunday, these would be perfect for Sunday brunch, right?
I love mimosas because they’re so simple to make with just two ingredients: juice and champagne. Both of which are easy to obtain. I figured we’d all have champagnes on hand for welcoming in the new year anyways so why not use leftover champagne for breakfast? That is, if there’s still leftovers after all the celebrations.
Let’s take a few minutes to create these amazing drinks, and welcome in the new year!
Pour apple cider into glasses or mason jars for a more rustic touch. You can use homemade apple cider, store bought, or fresh from the farmer’s market. No apple cider? You can always replace it with your favorite fresh juices. Orange juice is always a classic.
Top the glasses with sparkling champagne. Depending on how much you like champagne, you add as much or as little as you like. Top with cinnamon sticks for garnish and for extra cinnamon flavor.
Enjoy these celebratory apple cider mimosas with your favorite breakfast or brunch dish!

- 1½ cup chilled apple cider (homemade or store bought)
- 1 - 1½ cup chilled champagne
- Cinnamon sticks
- Pour the apple cider into two glasses or small mason jars.
- Top the drinks with champagne, more or less to taste.
- Serve the apple cider mimosas with cinnamon sticks.
