An easy to make blackberry syrup mixed with club soda and a touch of cream. This blackberry cream soda is the perfect way to use up your blackberries.
I can’t believe that summer is unofficially over.
I mean, September is when the kids go back to school, when the Halloween candies and decorations make their appearance in stores, when the weather starts to cool down. And if you’re lucky, it’s also when the leaves start to change colors! So jealous of those of you who get the full fall foliage experience!
But September is when summer starts for us San Franciscans. We get cloudy skies and fog through the year, and then we get the occasional heat wave in September and October. Who knows what it’ll be like this year?
I’m actually in Southern California as you’re reading this.
I can’t wait to share with you the details of our trip! But honestly, there’s probably not much to share. We’re just there for the weekend, and as of when I’m writing this, we plan Saturday to be a full day of Universal Studios and all things Harry Potter. Super excited but tickets are soo expensive!
In the meantime, let’s get back to this blackberry cream soda.
This homemade cream soda was inspired by a drink we had on our last mini weekend getaway to Sonoma Valley.
While the strawberry cream soda we had at the Naked Pig was creamy with just a hint of strawberries, I wanted my version of cream soda to have more fruit flavor and just a hint of cream. I probably should have added more cream though to make it more cream soda like. You can definitely add more if you like. =)
So be prepared to taste the flavor of summer.
In a small pot, add blackberries, granulated sugar, and a little bit of water. Allow the mixture to simmer over low to medium heat for a few minutes until the berries have softened and start to fall apart. Stir to prevent the berries from burning.
Once the berries are done, allow the blackberry syrup to cool down for a few minutes before dividing them evenly between two glasses.
Fill the glasses almost to the rim with club soda. Add a little bit of cream. Top the drinks with crushed ice.

Used to work at a coffee shop & made this all the time. It’s so glad, particularly the blackberry version, though raspberry is also good. If you can find Monin syrups (which they use in lattes, etc), cuts prep time to about 1 minute.
