Sometimes it’s the simple things that taste so amazing.

I love potatoes, and I constantly want to eat them in different ways. Breakfast, lunch, dinner, snack. I don’t mind.

Sometimes as fries, other times as mashed potatoes or hash browns, and today, as baked potato chips.

These baked potato chips are cut in thicker slices, but they’re still crispy and soo addictive. Every bite has a nice crunch to it.

I prefer thick cut potato chips because I feel I can taste more of the potato. Thinner potato chips can sometimes be too oily for me.

Lightly season these baked potato chips with sea salt and pepper, and they are ready for snacking.

I made a big batch and just sat with a bowl of these crispy potato chips next to me while I’m working on other things. Before I knew it, my potato chips were nearly all gone.

But these are definitely shareable.

So invite your friends, and serve these as snacks or even as a side. They’re the new fries or roasted potatoes.

With just four simple ingredients, they took very little effort to make, which I’m always all for.

Cut the potatoes into about 1/8 – ¼ inch in thickness. I cut mine about 1/8 inch in thickness. You want the potatoes to be about the same size so that they will bake evenly. Otherwise, the potato chips will be done at different rates and some may become burnt.

Soak these potatoes in ice cold water for about 30 minutes.

Preheat the oven to 450F. Line a baking pan with foil and lightly grease the surface with nonstick cooking spray or vegetable or olive oil.

Pat the potato slices dry and then toss them in vegetable or olive oil. Lightly season them with salt. You can always add more salt later.

Place the potato slices in a single layer on the baking sheet. You may need two baking sheets.

Bake the potato chips for 10 minutes. Take the potato chips out of the oven and flip them over. Bake for another 10 minutes.

Continue these steps until the potato chips are golden brown on both sides and are crispy, about 30 minutes.

If some of the chips appear done, remove them from the baking sheet to prevent them from becoming burnt.

Serve these potato chips alone or with your favorite dip.

  • 3 medium sized potatoes, sliced into ⅛ - ¼ inch thickness
  • 4 tablespoons vegetable or olive oil
  • Salt and pepper, to taste
