I’m a huge fan of colorful salads if you can’t already tell from all my previous posts. I love the mixture of different leafy greens with fruits, nuts, and cheese. It makes your average salad so much more exciting.
I think they go well with almost everything, at least, in my opinion. You can eat these colorful salads on their own, or you can pair them with your favorite meal.
Drizzled with poppy seed dressing, this pomegranate cranberry salad with feta cheese is absolutely delicious and takes just 5 minutes to throw together. How much easier can it get?
Some days, I’m super tired after work. I come home and the thought of cooking just doesn’t sound appealing. Haven’t you ever had one of those days?
So I like to stick meals in the freezer. Sometimes, I make quiche and freeze the extra slices. Sometimes, it’s leftover casserole. When I want to eat them, I can just warm them up in the oven or the microwave. And other times, I like to keep store bought frozen dinners in my freezer in case of emergencies. To pair with my pomegranate cranberry salad with feta cheese, I chose the Vermont White Cheddar Mac and Cheese. My sisters chose the Orange Chicken and the Mushroom Mezzaluna Ravioli. Each of these dishes work so well with this salad.
These meals are healthy and convenient, which I’m totally all for.
Heat your favorite meal up in the microwave, place them on a plate, and then add a side of this pomegranate cranberry salad. You’ll have a delicious and healthy meal in just several minutes.

- 2 cups spring mix salad
- ⅓cup pomegranate seed
- ⅓ cup dried cranberries
- ⅛ cup feta cheese
- Poppy seed dressing
- Toss all the ingredients together until well combined. Drizzle poppy seed dressing on top.
- Serve the salad as a main dish or as a side.

You can substitute or take it out completely. lol. I like them in really small amounts. And very crumbled up. =)
