Sweet and slightly tart, this bubbly drink requires only two ingredients: blood orange juice and champagne. This seasonal blood orange mimosa tastes amazing and refreshing, perfect for spring.
I don’t drink alcohol often, but when I do, I like my drinks as fruity and vibrant as this. =)

I was with a friend in the Castro area and decided to stop by Bi-Rite Market, where I previously got my blood oranges. In case you’re wondering, Bi-Rite Market is owned by the same family as the renowned Bi-Rite Creamery. Where I also stopped by for balsamic strawberry ice cream, which I highly recommend. While I was at the market, I saw a sign that said the blood oranges were the last of the season. So of course, I bought several. I mean, after this, I’ll probably have to wait until next year before I can get my hands on blood oranges again. But that’s okay too, because I’m waiting (impatiently) for peaches and nectarines to be at their peak. Then you’ll see an abundance of those recipes.
But for a few weeks now, since I posted my Blood Orange Lemonade, I’ve thought about Blood Orange Mimosa. Why not? Two parts juice and one part champagne. Doesn’t sound too hard, right?
So I got to juicing all those blood oranges. I even added pulp to the drink because really, we can’t waste any part of those rather pricy (yet soo good!) blood oranges. If you can’t find blood oranges, other options that would work perfectly well as mimosas are the original oranges, clementines, or even grapefruit for a slightly bitter twist.
Have you ever had Argo tea? I first stumbled across them while looking for something new to try. I decided on these because, well, I really liked the look of their bottles. I know, I know. I judged it by its appearance. Shame on me. But, I ended up really liking their teas. And I kept the bottles and reused them to carry drinks. And well, use them as a makeshift cocktail shaker. What? It works.
Add pre-chilled champagne into a bottle and then pour in the blood orange juice. Shake them to incorporate the ingredients.
Serve the mimosa cold topped with slices of blood oranges and berries.

This would be a great twist on the standard mimosa. I have yet to see a blood orange in PA, however. I have not had one since we left Scotland.
