Acai blended with banana to create a creamy parfait topped with sweet strawberries, sliced bananas, and crunchy granola. Quick and easy to make, this acai bowl can be a delicious breakfast or a late afternoon snack.
Lately, I’ve been obsessed with acai bowls. Have you had one before?
Acai bowls are basically acai puree blended with other fruits, and occasionally some nut butter, to create a smoothie that’s thick like yogurt or ice cream. Then they’re topped with granola, a variety of fruits, and sometimes coconut flakes. They taste so amazing and are very healthy, filled with tons of vitamins and antioxidants. They’re served in a bowl and eaten with a spoon.
It tastes so amazing. Each spoonful is filled with creamy smoothie, fruit, and granola, both of which I absolutely love. This version of the acai bowl is easy to make. It’s the perfect early morning breakfast or a late afternoon pick me up. I’ll have to share this with my friends at Angie, the Novice Gardener’s Fiesta Friday.
But if you’ve ever bought these bowls, they can be pretty pricy. So I thought it’d be perfect to try to tackle these bowls. That way I can add as many ingredients as I like.
A few posts ago, I mentioned that I won a Sambazon smoothie giveaway package from Purely Elizabeth.
In this recipe, I used two pouches from the Sambazon Original Smoothie pack. These are sweet. If you prefer the unsweetened version, then I suggest getting the Sambazon Unsweetened Smoothie pack. I’m not paid by the company, I just really like these. If you don’t have access to these smoothie packs, I suggest either frozen acai or acai puree. And if you can’t get acai, you can always substitute with blueberries. Remember, it’s all about what you like to eat.
You want to make sure that the smoothie pouches are still semi frozen because when you blend them, it’ll be thicker in consistency. Once they’ve melted, the consistency is more like that of a smoothie. Add these semi frozen smoothie packs to the blender along with half a banana. Blend until they become smooth and thick.
Pour the acai and banana blend into a bowl. Top the blend with sliced bananas and strawberries. Add granola. I used store bought granola because I didn’t have time to make homemade granola for this recipe. But if you would like to make your own, you can try my Honey Almond Granola. While my recipe is not vegan, there are recipes out there for vegan granola. Take a look at the Gluten Free Vegan’s recipe. =)
Serve these acai bowls cold.
