A creamy yogurt parfait topped with fresh strawberries and lychee fruit, perfect as a delicious healthy breakfast or as a snack.
Yogurt parfaits are one of my favorites! What’s not to like? You get to have your favorite yogurt and top it with fruits and granola and whatever it is that you like. This isn’t much of a recipe, I know. But it’s meant to be paired with my Crunchy Honey Almond Granola recipe so I hope that you will enjoy both =)
First, wash the strawberries and remove the stem and leaves.
Take one strawberry and chop it up into small pieces until it appears almost like a puree. Place this at the bottom of the parfait cup.
Next, add your favorite yogurt. I used Noosa Yoghurt, an Australian style yogurt, I’ve been addicted to.
Chop up the rest of the strawberries into bite size pieces.
Slice the lychee in half but not completely through. Make two more cuts the same way. The lychee will appear flower like.
Top the yogurt with the strawberries and lychee. You can add Crunchy Honey Almond Granola too. Garnish the yogurt with a couple mint leaves.
Serve cold and enjoy!

You’re welcome! I always stress moderation. lol. I don’t eat all these dishes and desserts by myself. I like to try them first and then give them away. And most of the desserts are in smaller portion so you can’t have too much anyway =)

I originally found Noosa yogurt at Target. They carry the most flavors that I’ve seen right now. But I’ve bought a few from Safeway. And as of recently, I’ve seen them sold at Costco. Do you have these chain stores near you? I know some of them are West Coast stores.

Target is the only one we have somewhat close….and that’s about 40 minutes from me. I’m going to be in Grand Rapids on the 17th, though at the GF Expo at the Delta Plex. If I think about it and I have some cash on hand maybe I’ll pick some up. 🙂

Thank you! I’ve never had to describe fruit before so I don’t know if I can do it justice! It’s very sweet and juicy. I think it really reminds me of tropical fruits. It has a certain crispness when you bite into it, a little bit like pear. You’ll have to try it! Most Asian markets should carry it. If not fresh ones, they should have canned ones, but those are usually sweeter.
