The light flavor of lemonade, the hint of floral, the refreshing flavor of mint, and the fizziness of the club soda. It’s simple, delicious, and festive enough for any small gathering.

In a tall glass, add hot water to a hibiscus tea bag. Allow the hibiscus tea to steep for several minutes. Remove the tea bag and allow the tea to cool for several minutes. Set aside for now. You won’t need to use all the hibiscus tea for one serving. But you’ll have enough to make multiple drinks.

To make this drink, you’ll want to have a lot of crushed ice on hand. The crushed ice helps create the layers in the drink. When you’re pouring the different layers, you want to pour it directly on the crushed ice so that it doesn’t mix with the layer below.

In a medium sized glass, mix lemon juice and sugar together until incorporated. Add mint leaves and muddle it for a few minutes so the minty flavor is released. Add crushed ice. Then add gin. Then add more crushed ice. Next add about 1/4 cup hibiscus tea. Add more crushed ice. Then top with club soda. Finish the drink off with more crushed ice and mint leaves for garnish.
