Have you ever had cacio e pepe?

It’s one of my favorite pastas to make on a weeknight. It takes very little time to put together with simple ingredients that you may already have on hand. I like to keep parmesan around just in case I need to make a quick yet seriously delish pasta dish.

All cacio e pepe requires is pasta, butter, freshly ground black pepper, and parmesan. Bound together by starchy pasta water, this dish becomes creamy and flavorful.

Today, I wanted to use this cacio e pepe style of pasta to make everything bagel seasoned pasta. All those extra little spices add a little twist to the classic dish that we all know I love.

I always keep a bottle of everything bagel seasoning on hand for those times when I need a sprinkle of it on my avocado toast or on my soft scrambled eggs. But if you’ve ever had it on pasta, you know that it’s the perfect addition.

For this dish, I used bucatini pasta, which is similar to spaghetti but thicker and hollow in the center. If you have spaghetti on hand, then definitely use that. But I found that bucatini was perfect for the creamy sauce to cling on all the surfaces. And I loved that.

This pasta dish is creamy, buttery, and peppery. All of the amazing flavors that make cacio e pepe a classic and a favorite. But for this dish, I added everything bagel seasoning for a more “spiced” version. It’s seriously a game changer. Because now I have another dish to add to my meal planning.

In a medium sized pot, bring water to a boil and cook the bucatini according to the directions on the package until al dente. Reserve about a cup of water. Then drain the pasta and set aside for now.

In a large skillet over medium heat, melt two tablespoons of butter. Add cracked black pepper and cook for about a minute until toasted.

Add about ½ cup reserved pasta water to the skillet and bring it to a simmer. Add the bucatini and the rest of the butter. Reduce the heat to low and add the parmesan. Stir and toss with tongs until the cheese has completely melted.

Next, remove the pan from heat and add the pecorino. Stir until the cheese has melted and the sauce coats the pasta.

Toss the pasta in the everything bagel seasoning. Add more pasta water if it appears too dry.

Serve the cacio e pepe everything spiced pasta immediately warm.

Ingredients
  • 8 oz bucatini
  • 1 cup reserved pasta water, divided
  • 3 tablespoons butter, divided
  • 1 teaspoon ground black pepper
  • 1 cup shredded Parmesan cheese
  • ⅓ cup shredded pecorino cheese
  • 1 tablespoon everything bagel seasoning
