We decided for New Year’s Eve that we were going to do a Thai Tom Yum hot pot since it’s been so cold and rainy lately. It’s the perfect way to end the year with my family, especially when we’re gathered at the table eating some of our favorite foods. And then my sister and I spent the rest of the night sitting in front of the Christmas tree watching performances on tv and waiting for the new year to arrive.

New Year’s Day lands on Friday this year so that means we can continue celebrating through the weekend! Long holiday weekends are always the best! And what better way to celebrate the arrival of a new year and the end to one that we wish never happened than with a festive cocktail?
This pomegranate Moscow mule is super simple to make, festive, and the kind of cocktail I would love to indulge in to ring in the new year. I love the sweet and tart taste of pomegranate juice mixed with the bubbliness of the ginger beer. The ginger beer also adds a spicy kick to the drink, giving it so much more depth. Mix all the ingredients together, top with ginger beer and crushed ice. Garnish with pomegranate arils and lime wedges and you’re all set!
In a medium sized glass, mix together vodka, lime juice, and pomegranate juice until combined. Top the glass with ginger beer and crushed ice.
Serve the pomegranate Moscow mule cold.
