We have just a little more than a week left until Christmas. It definitely doesn’t feel like Christmas this year. But I am still excited for all the holiday treats. I’ve been baking cookies and making holiday treats. My sisters and I have been busy wrapping presents for each other. And for everyone else even if we might not see them for awhile.
We’re setting ourselves up for a Christmas day at home: opening presents, watching Hallmark Christmas movies, sipping hot chocolates. Oh, and watching Bridgerton on Netflix since it’s released on Christmas Day. I’ve been waiting forever for it to come out! Soo excited for extra days off and a cozy day in.
And how can we forget about the holiday baking? We’re going to need a batch of cookies to share with the family while sipping hot chocolate. And of course, a plate of cookies for Santa.

It combines two different chocolates: cocoa powder and melted semi sweet chocolate. It’s rich, it’s decadent, and it’s seriously the kind of the cookie you’ll want to make if you’re a big fan of chocolate. I made my own small batch of salted caramel, but you can definitely use store bought one. Salted caramel lasts forever in the fridge, which I love. It means I can have multiuse for it and don’t have to worry about rushing to use it all up.
But seriously, you need to make these salted caramel chocolate cookies. They’re simple, delicious, and perfect for those who love salted caramel and chocolate.
In a microwave safe bowl, melt semi sweet chocolate according to the directions on the packaging with butter. Stir the chocolate until smooth.
Transfer the melted chocolate into a large mixing bowl. Add brown sugar and granulated sugar to the bowl. Mix until combined. Add egg and vanilla extract. Mix until well combined.
In a separate bowl, whisk together flour, cocoa powder, baking powder, and a pinch of salt.
Pour the dry ingredients into the well ingredients. Mix with a spatula until the dough comes together.
Refrigerate the cookie dough for about a half hour so that the cookie doesn’t spread too much.
Preheat the oven to 350F.
Line a baking sheet with parchment paper.
Use a cookie scooper to scoop cookie dough onto the baking sheet. About 9 cookie dough ball per cookie sheet.
Bake the cookie for about 8-10 minutes. Repeat with the rest of the cookie dough.
Drizzle salted caramel over the chocolate cookies.
Serve the salted caramel chocolate cookies warm.
