Frozen watermelon cubes blended until smooth then mixed with lime juice, simple syrup, fresh cucumbers, and a splash of club soda. This watermelon cucumber cooler is perfect for the last of the warm days.
I know that we’re already well into fall, but the month of October is actually San Francisco’s short live summer.
Most of the time, especially when you live closer to the ocean, it’s cold with overcast skies and fog so thick you can barely see half a block ahead of you. It’s the sort of weather you appreciate when you’re a native and have grown up in it your whole life. But when all of the city is warm with clear blue skies? You savor every moment of the warmth and the sunshine. And take out those sundresses and shorts that you rarely pull out unless you’re traveling outside the city.
So… in honor of SF’s short summers, I’m sneaking in one final summery drink before it cools down again. Because we all need something sweet, refreshing, and cool for those warm days. Especially when you live in an area that doesn’t have any air conditioning.
If you’re a fan of watermelon and cucumbers, this drink is definitely for you. The sweet taste of watermelon with a hint of lime and refreshing cucumbers. It’s the kind of drink that would satisfy your thirst during a heatwave. Add simple syrup for a little bit of sweetness, a splash of club soda for bubblyness, and crushed ice.
Definitely my kind of drink on a hot unair-conditioned day. Plus it only takes a few minutes to make with so little hassle.
Add slices of cucumber, lime juice, and simple syrup to a glass. Muddle the ingredients together for a few minutes until the juices of the cucumber comes out. Pour the juice through a strainer into another glass.
In a food processor a blender, blend frozen watermelon until smooth. Pour the frozen watermelon into the glass. Top with sparkling water.
Garnish the watermelon cucumber cooler with long strips of cucumbers, crushed ice, and either mint leaves or perilla leaves.
