With Valentine’s Day just around the corner, I wanted to share with you special treats. These strawberry chocolate cookies are the ultimate dessert. It combines the richness of chocolate with the sweetness of strawberries. In. Every. Bite.

Before we get started though, I have to admit that I have a relatively unhealthy obsession with chocolate. Back in college, I had an emergency stash of chocolate hidden in the bottom drawer of my storage bin just in case I had a chocolate emergency. You know, for when you have that middle of the night craving? Or when you need a break from studying for your midterms? I might have had a chocolate problem. And I don’t think it’s gone away. lol

So these cookies? They really are one of my favorites. I mean, the chewy edges, the fudgy centers, and the richness of the chocolate. How can you resist?

And then add freeze dried strawberries into the cookie dough. Now every bite of these cookies are filled with strawberries and chocolate. My favorite combination. I used freeze dried strawberries so that the cookie dough doesn’t get too wet. But you can still get the full flavor of the strawberries.

In a large bowl, beat together butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla extract until combined.

In a different bowl, whisk together all purpose flour, cocoa powder, and baking soda until combined. Then pour the dry ingredients slowly into the wet ingredients, and mix as you pour until combined.

Next, add a teaspoon of milk and freeze dried strawberries, and mix until it’s well combined.

Let the dough chill for at least an hour.

Preheat the oven to 350F. Line a baking sheet with parchment paper.

Remove the dough from the fridge and let it sit at room temperature for about 10 minutes.

Roll the dough into balls and place about 12 on the baking sheet. I use a cookie scooper to get even amounts of cookie dough.

Bake the cookies for about 9-11 minutes until the edges are set. Let the cookies cool for 5 minutes before transferring to a cooling rack. Repeat with the rest of the cookie dough.

Serve these strawberry chocolate cookies warm or cooled. Store leftovers in an airtight container for a few days.
