Strawberry Chocolate Cookies

Chewy and fudgy chocolate cookies filled with freeze dried strawberries in every bite. These strawberry chocolate cookies are simple to make, delicious, and perfect for sharing.
Ingredients
  • ½ cup unsalted butter
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup all purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon milk (any type)
  • 2 cups freeze dried strawberries
Directions:
  1. In a large bowl, beat together butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla extract until combined.
  2. In a different bowl, whisk together all purpose flour, cocoa powder, and baking soda until combined. Then pour the dry ingredients slowly into the wet ingredients, and mix as you pour until combined.
  3. Next, add a teaspoon of milk and freeze dried strawberries, and mix until it’s well combined.
  4. Let the dough chill for at least an hour.
  5. Preheat the oven to 350F. Line a baking sheet with parchment paper.
  6. Remove the dough from the fridge and let it sit at room temperature for about 10 minutes.
  7. Roll the dough into balls and place about 12 on the baking sheet.
  8. Bake the cookies for about 9-11 minutes until the edges are set. Let the cookies cool for 5 minutes before transferring to a cooling rack. Repeat with the rest of the cookie dough.
  9. Serve these strawberry chocolate cookies warm or cooled. Store leftovers in an airtight container for up to a few days.
