I hope you’re enjoying your weekend! The last few weeks have been so warm and filled with clear skies and all sun. San Francisco’s summer usually starts in September and ends in mid October. We like to soak up the good weather as much as we can before it gets chilly again and the rain begins. That means that I’m going to the farmer’s market as much as possible while I can. =)
It’s also been kinda hectic lately. So many good changes in my life, especially in the past two weeks. And a brand new start. Soo it’s been a little difficult to keep up with life and also maintain a constant presence on the blog the last couple months. But in about a month, that’s all about to change. And I am soo excited. Especially since it’ll be just in time for the holiday season.
In the mean time, let’s talk about these mushroom grilled cheese sandwiches.
Fall feels like the perfect time for all the comfort foods. From warm comforting soups to the ultimate comfort foods like grilled cheese sandwiches. I mean, how can you not love grilled cheese sandwiches? Buttered bread, oozing melted cheese. My mouth is watering just over the thought.
But I thought I would give the classic grilled cheese a little upgrade. Sauteed mushrooms and onions. Seriously, if I could, I’d probably add mushrooms to everything. Top with everything but the bagel seasoning? Yes, please. Annnnd a drizzle of honey. Because honey + melted cheese? It’s completely irresistible, and I’m not sure why I haven’t paired the two long before now.
This mushroom grilled cheese sandwich is an absolute weeknight favorite. It’s super easy to make, and it’s the perfect comfort food. I mean, how much better can it get? I used havarti and mild cheddar for my grilled cheese, but if you prefer other cheeses, you are perfectly welcomed to use those instead. But definitely top with everything but the bagel seasoning and don’t forget the drizzle of honey. Because it means elevated comfort food.
In a medium sized skillet, add olive oil over low to medium heat. Once the olive oil has heated for about a minute, add minced garlic, sliced onions, and sliced mushrooms. Cook for several minutes until the onions have caramelized and the mushrooms have softened. Season with salt and pepper to taste. Set aside for now.
Place shredded havarti cheese on one slice of bread. Choose bread that’s thick and sturdy. Place shredded cheddar cheese on the other slice. Add the mushroom onion mixture on one slice. Then put the two slices of bread together. Rub butter on the outside of the sandwich. Sprinkle extra shredded cheese and as much of the everything spice seasoning as you like on top and press down to make it stick to the bread.
In medium sized skillet, add butter over low to medium heat. Once the butter has melted, place the sandwiches into the pan. Cook for 3-4 minutes until browned, then flip the sandwiches over, and cook for another 3-4 minutes.
Serve the mushroom grilled cheese sandwich with a generous drizzle of honey.

- 4 slices of ciabatta bread
- ½ cup shredded havarti
- ½ cup shredded mild cheddar
- 2 tablespoons butter
- Everything but the bagel seasoning for topping
- Honey for drizzling

This is dish is amazing, it is different that you will come up with a grilled cheese sandwich filled with mushrooms and onions and then you top it off with a bagel with seasoning. I think that is so amazing.
