When it comes to salads, I love one that’s filled with different ingredients that give it color, texture, and contrasting flavors. I like salads that are both sweet and savory, soft and crunchy. And filled with colors. This jammy egg bacon salad has all of that.

The ingredients are simple, ones that you probably already have at home, or if not, can readily buy from your local supermarket. And if you like certain ingredients more than others, you can most definitely substitute.

Every bite has a contrast of flavor and just thinking about this salad makes my mouth water. And lately, I’ve been obsessed with jammy eggs, aka medium boiled eggs, so I couldn’t resist adding them to this salad. The eggs are cooked until the yolk has a jam like consistency. And it’s so perfect in salads, on toast, and basically by itself. You need to try it. Soon. I always make extra eggs in case I want to snack on them. Or in case something happens to one of them.

In a small pot, boil enough water to cover the eggs. Allow the water to stay at a simmer and add eggs to the pot. Cook the eggs for 7 minutes. Remove the eggs and transfer to a bowl of cold water, preferably ice water. Let the eggs cool for at least three minutes before peeling. If you prefer the eggs to be more runny, remove the eggs at 6 minutes. If you want the eggs to be fully cooked, cook the eggs for 10 minutes.

Toss mixed greens, torn up bacon pieces, dried cranberries, sliced tomatoes, walnuts, and fried shallots together. Add eggs. Drizzle with herby buttermilk ranch dressing.

    I’m the only one in a house of 6 who likes jammy eggs. And I didn’t know they had a name besides over cooked soft boiled eggs or under cooked hard boiled eggs.
