Oh the joys of a grilled cheese sandwich.
There’s something so addictive about a simple grilled cheese sandwich. Maybe it’s because depending on the type of cheese you use, the flavor of the grilled cheese sandwich completely changes. Add sun-dried tomatoes and you’ll elevate your grilled cheese with a slight tartness. Drizzle with honey, and now you have a sweet and savory and slightly tart meal. Sooo good.
The funny thing is before my college years, I did not like cheese. Actually, I didn’t like anything dairy except ice cream. And to be honest, I still don’t like drinking milk. Milk belongs in milk teas and as an ingredient in cooking and baking. *shrug*
Somehow during my college years, my housemates managed to convert me. And now, I almost always have some type of cheese sitting in the fridge waiting to be eaten or used. During the weekends, you’ll probably find me at the farmer’s market tasting cheese and buying a wedge. Or at Trader Joe’s debating what new cheese I want to try. FYI, my favorite at the moment is the Italian truffle.
Place slices of cheese on bread and layer with sun-dried tomatoes. I used colby jack cheese for this recipe, but other ideas include brie, mozzarella, gouda, havarti, and white cheddar.
Top with another slice of bread.
In a medium sized non stick skillet, add a tablespoon of butter over low heat. Allow the butter to melt. Place the sandwich in the skillet and let the sandwich brown for 2-3 minutes. Flip the grilled cheese over and let the bread brown for another 2-3 minutes until the cheese has melted.
Remove the grilled cheese from the skillet. Slice the sandwich in half. Drizzle honey on top.
Serve this sun-dried tomato grilled cheese sandwich warm.

- 4 slices of bread
- 1½ cup grated cheese or 6-8 slices of colby jack
- ½ - ¾ cup sun-dried tomatoes
- 2 tablespoons butter
- Honey (optional)
- Sea salt (optional)

We’d never heard of a sundried tomato when I was a child, but a grilled cheese with sliced tomato was my favorite lunch the whole year I was in first grade.
