Can we talk about the love I have for cauliflower? Especially when it’s roasted? It’s not a new thing, this love for cauliflower. But it was definitely renewed after my recent trip to New Orleans.
The fun part about traveling when you’re a food blogger is that so many things can inspire you. Every place that you travel to will have their unique and distinct dishes. New Orleans happens to have so much to offer in terms of delicious food and fun inspirations. Almost every meal I had made me want to return home and replicate it.
We went to happy hour at Domenica’s, an Italian restaurant located in the Roosevelt Hotel in the Central Business District of New Orleans. This place was recommended by my cousins, who lives across the river in Harvey. And since we were staying at an AirBnb just around the corner, it was easy to stop in for their happy hour, which, by the way, is every single day.
We ordered the roasted cauliflower with whipped feta. And it was ah-maaazing. This isn’t that cauliflower. But all of a sudden, I came home and wanted to roast a whole cauliflower. You know, until it’s super tender and slightly charred on the edges? Plus, it’s kind of fun serving the cauliflower with a sharp knife right through the center.
I know not everyone loves cauliflower. I’ve been told that so many times before. But if you’re not a fan, have you tried cauliflower roasted? I swear, it’s a game changer. The cauliflower becomes slightly nutty. And really, all you need to season cauliflower with before roasting is salt, olive oil, and garlic. So simple.
But for this version, I wanted to use my favorite seasoning: everything spice.
Did you have any doubt it would be my favorite seasoning? So simple, so flavorful, and so delicious. I don’t think I’d ever be tired of it. I buy mine from Trader Joe’s, but if you’re not near one, a simple search online will give you recipes to it.
Roasted cauliflower is one of my favorite things to snack on. Often times, I’ll cut the cauliflower into smaller florets and roast them just seasoned with garlic, olive oil, and salt. And it’ll be completely gone before dinner. I know better than to expect it to last.
This everything spice version is soooo good. And I might serve it whole from now on just because it’s fun slicing it up as we’re eating.
I hope you’ll enjoy this dish as much as I did.
Preheat the oven to 400F.
Lightly grease a baking pan with olive oil.
Drizzle olive oil all over the whole cauliflower. Lightly season the cauliflower with salt. Don’t forget to season the bottom of the cauliflower. The bottom has an opening for all the seasoning to fall into the center of the cauliflower.
Roast the cauliflower for about 20 minutes. Remove the cauliflower from the oven and season with everything spice and crushed red pepper. Again, make sure to season the bottom well. You can add as much or as little of the seasoning as you like. I personally think the more the better since the seasoning falls off the cauliflower.
Return the cauliflower to the oven, and roast for another 20-25 minutes until the cauliflower is tender.
Remove the cauliflower from the oven and transfer to a dish. Top with torn mint leaves.
Serve the everything spiced whole roasted cauliflower with your favorite sauce if desired.
I sometimes like to serve it with ranch.

- Serve the everything spiced whole roasted cauliflower with ranch dressing if desired.

Our family has rediscovered cauliflower. It used to be just a vehicle for dip. Now we regularly have roasted cauliflower or cauliflower mash.

Roasted cauliflower IS a game-changer! I never cared for cauliflower before, and had never thought to roast it until i started lookingnup vegan recipes. Now I’m completely obsessed, and make it about once a week. I haven’t roasted it whole, though. That’s another kitchen adventure I need to grt into. Thanks for sharing this one 😊
