It’s been so nice having extra days off to recover and recuperate after being sick for almost two weeks. All I did was sleep, eat, and watch holiday movies. My sisters and I love watching the first two Home Alone movies Christmas Eve or Christmas Day. It’s just fun to watch. And somehow every time I watch it, I discover something I don’t remember seeing or hearing the year before. Lol.
Now let’s talk about these rice crispy treats. These chocolate chip toffee rice crispy treats will be the very last recipe I’m sharing this year. The rest of the posts are going to be round ups of my best recipes and my recipe fails. As you’ve seen past years.
Every single bite of these soft and chewy rice crispy treats are filled with chocolate chips and toffee bits. It’s super easy to make with just a few simple ingredients and the cooking part takes just minutes. It’s one of my favorite treats to make when I don’t have much time.
I was excited to find that mini marshmallows were in my Degusta Box this month. So it’s perfect for my end of the year holiday treats.
Line a 9×9 inch baking pan with parchment paper and set aside for now.
In a large pot, melt butter over low heat. Once the butter has melted, add mini marshmallows to the pot. Use a wooden spoon or a heat resistant spatula to stir until the marshmallows have melted. Remove the pot from heat.
Pour the rice crisp cereal to the pot, one cup at a time. Stirring in between each addition until all the cereal is covered in the melted marshmallow.
Add the chocolate chips and toffee bits. Stir to incorporate all the ingredients. Some of the chocolate will melt into the rice crispy treats.
Transfer the marshmallow cereal mixture over to the baking pan. Use the spatula or wooden spoon to smooth out the surface and press down against the pan. Sprinkle extra chocolate chips and toffee bits over the top the rice crispy treats. Press down to make them stick.
Let the rice crispy treats sit on the counter for at least a half hour before slicing into 16 bars.
Serve the chocolate chip toffee rice crispy treats for a snack.

- 5½ cup crisp rice cereal
- ½ cup chocolate chips
- ¾ cup toffee bits
