We’re less than a week away from Christmas! It’s going to be a frenzy with all the unboxing, wrapping, and baking that’s taking place over the next few days. Plus, I have so many dinners and events to attend over the next week. The end of the year is always so busy and exciting. lol.
The bad part is that I caught a cold several days ago, and I’ve been struggling to recover from it. It might be all the late nights, all the events, all the work. There’s too much going on at once. And as much as I love it, I think it started taking a toll. So now, I’m trying to recover from a cold, especially the coughing part. It’s always the worse for me because sometimes it takes several weeks to go away. If you have tips for a quick recovery so I can enjoy the holidays, I’d love to hear it.
In the meantime, let’s talk about these peppermint rice crispy treats.
During December, I want everything to be peppermint. From desserts to my hot chocolate, I love that fresh minty taste of peppermint. It’s festive and perfect for the holidays.
So of course, I wanted to share this with you. Rice crispy treats with the ooey gooeyness of the melted marshmallows. Every bite is filled with a hint of peppermint. Super easy to make with just a few simple ingredients. It’s my kind of winter dessert.
Line a 9×9 inch baking pan with parchment paper.
In a large pot, melt butter over low heat. Add marshmallow to the pot, and stir until the marshmallows are completely melted. Constantly stir to prevent the marshmallows from sticking and burning.
Add crushed peppermint candy canes, and then add the rice crispy cereal to the pot, about one cup at a time. Stir to mix the crushed peppermint candy canes and cereal with the marshmallow. Once all the rice crispy cereal is covered in the marshmallow and the peppermint candy cane is well incorporated, pour all the cereal marshmallow mixture into the baking pan.
Use a spatula to spread the rice crispy mixture evenly. Sprinkle extra crushed peppermint candy canes on top. Let the peppermint rice crispy treats sit for about a half hour until set.
Use a sharp knife to cut the peppermint rice crispy treats into 16 pieces.

Hope you are feeling better. I use vitamin C packets that dissolve in water, along with Cats claw herb or olive leaf herb, both are anti viral. The lingering cough gets me, too, so I keep lots of cough drops handy or zinc losanges.

Thanks for this fun recipe! I live in Oaxaca, Mexico for six months of every year, and finding (or at least looking for) ingredients is always an adventure. Different items might be found in one area of town that are not found in another or in a different type of store where you would least expect. It’s fun to discover new neighborhoods while on these forays. Rice crispies do not seem to exist here, but Choco Krispis do! We found the round peppermint candies, and our metal lime squeezer was the perfect tool for the job of crushing them. Every year we make festive bags of cookies and rum balls for our friends, and this year we added your Krispi treats. I thing people will love them!
Two other things that I have never found here are ginger cookies or molasses.
