Today officially marks the fourth year since this blog started!
Can you believe it?! Time goes by so fast!
So of course, we have to celebrate with dessert. Again!
Last year, it was with these apple cider doughnuts with maple glaze. And the year before that, we celebrated with mason jar lid apple crumble. And this year, we’re celebrating with this apple cobbler à la mode. Because as amazing as any dessert is, it’s even better with ice cream. But… Are you seeing a pattern?
I swear, it’s not on purpose! Lol. But somehow, apples have been the theme each year.
But I have to stop and say thank you for the support you guys have given me over the years.

I mentioned so many times before that when I clicked the publish button on that very first post all those years ago, I was trying to find a place to share my recipes, to find a creative outlet, and to stay distracted from what felt like the worst part of my life at that moment in time.
I never dreamed that this blog would become what it is today.
And let’s be honest, it wouldn’t be what it is at all without you guys. <3 Thank you so much for stopping by and reading all the stories I wrote, trying the recipes I’ve shared, and traveling with me (via posts and photos) to places I’ve visited. For absolutely everything.
This year has been particularly difficult for me as most of you may already know. My grandma passed away earlier this year, and it has been hard balancing family, work, and this blog. So there were a few times throughout the year that I had to step away from the blog to regroup, which I’ve never had to do before and that in itself was hard. But you have no idea how much it meant to me to have this blog to share my thoughts and my feelings, to read the stories and advice that you shared with me.
It felt as if this blog has come full circle. So thank you for helping me make this blog what it is today.

In the meantime, we can’t forget the apple cobbler!
Preheat the oven to 400F. Lightly grease a 13×9 inch baking pan with nonstick cooking spray or olive oil. Set aside for now.
In a large mixing bowl, add sliced apples, brown sugar, and ground cinnamon, and mix until well combined. Pour the apple mixture into the baking pan, and bake the apples for about 15 minutes.
You can use whatever apples you like. But I love granny smiths for tartness or gala apples.
While the apple filling is baking, make the cinnamon biscuits.
For the biscuit topping, whisk the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and a pinch of salt together in a large bowl. Add the butter and break the butter into the flour mixture with a fork or pastry cutter until it appears crumb like. Drizzle buttermilk into the batter and mix until combined.
Take the dough and flatten it. Then spread it on top of the apple filling. The dough doesn’t have to cover all of the filling.
Mix together egg and milk to create an eggwash. Use a pastry brush to brush the eggwash over the dough. This will help the top of the biscuits brown. Sprinkle turbinado sugar on top of the dough. I think the coarse sugar makes the biscuit so much prettier.
Bake the apple cobbler for 30-35 minutes until the top is slightly browned and the dough is baked through. Allow the cobbler to cool for a few minutes.
Serve the apple cobbler à la mode – with your favorite ice cream!

Wow this looks so delicious. We don’t really celebrate fall or autumn in Australia like in North America. But if I had to choose something this popular during this time I would have to choose pecan pie. I had a real one when I was in the US and it was scrumptious.
