Avocado toast topped with a spicy imitation crab salad, thinly sliced cucumbers, and a spring mix. This California Pokecado Toast is a simple yet delicious meal.
Oh my gosh! This pokecado toast. Have you heard of it before?
I have to confess: I seriously couldn’t resist when I first discovered that pokecado toast existed at Pokeatery in San Mateo. Poke + avocado toast? How much more dreamy can a meal get? It’s easy to make with simple ingredients, and it looks absolutely amazing. I can eat this all. the. time.
Here’s the thing though. I don’t eat raw fish. The idea of eating raw fish just doesn’t appeal to me. I know. I know. You’d think that since I’m such a foodie, I would be open to something so common as sashimi is. But nope. Raw is out for me. Instead, my version is a combination of California Roll + Sriracha + Avocado toast.
So guys… This California Pokecado Toast is now my current favorite meal or snack or whatever I want it to be just so I can eat it.
If you prefer raw fish, pick your favorite, toss it in a little soy sauce, sesame oil, and Sriracha to taste. In the mean time, I’ll show you how to make this California Pokecado Toast with imitation crab, just like with California rolls.
Chop up imitation crab, or real crab meat, as finely as possible. Place the chopped imitation crab into a medium sized bowl. Add mayo, Sriracha, soy sauce, and sesame oil, and mix until all the ingredients are well combined. Set aside for now.
In a separate medium sized bowl, add avocados and lightly smash the avocado with a pinch of salt. Set aside for now.
Toast your slices of bread.
Divide the smashed avocado over the four slices of bread. If you’re like me though, I used one less slice of bread so that I can have more toppings on my toast. Lol.
Top the smashed avocado with thinly sliced cucumbers and spring salad mix.
Add the spicy crab salad on top.
Serve the California Pokecado Toast with furikake and black sesame.
Enjoy!
