It’s been absolutely gorgeous weather here in the Bay Area these last few days, and I have been soaking up all that warmth. I’m so glad that I didn’t have to work yesterday! So I had the whole weekend off to enjoy the sunshine.
I had the chance to meet Christina Lane from Dessert for Two at her book signing at Omnivore Books on Food. By the way, have you ever been to that bookstore? It was my first time yesterday, and I was absolutely amazed that the bookstore is dedicated to food. Obviously, right? By the name of the store? The store is actually just a huge room, but I love that it’s all about food, and that the events are all centered around food. There are a couple more book signings that I’m so tempted to attend.
Christina was so amazing and down to earth. She answered all our questions about how she started her blog, her inspirations, her family. It was such a fun event.
Plus, she brought slices of cheesecake, mousse, and peanut butter chocolate chip cookies for us to try from recipes from her book, Sweet and Simple. I absolutely loved the peanut butter chocolate chip cookies, and I’m not even a fan of peanut butter when it’s used in baking. I love peanut butter, but not when it’s used as an ingredient in cookies and pastries. So these peanut butter chocolate chip cookies are that good. And I think I’ll need to make a batch of them soon. Because two cookies just weren’t enough.
But let’s talk about this dragon fruit layered overnight chia pudding. I’ve been obsessed with layered chia puddings, especially all the gorgeous ones that you see on Instagram. So, I decided that I needed to make one of my own. I think you can expect more of these over the summer.
I’ve made plenty of overnight chia puddings before. They’re so easy to make and customize to your taste. The simplest version is just adding vanilla extract or mixing with green tea powder. But when you top your chia pudding with a dragon fruit banana smoothie? And garnish with frozen berries? It’s the perfect healthy treat. And so refreshing for hot summer days too.
To make the overnight chia pudding, add chia seeds to a medium to large jar, then add almond milk, vanilla extract, and your choice of sweetener. I usually use sugar or maple syrup. Stir with a spoon to incorporate all the ingredients. Place the jar in the fridge overnight.
When ready to serve, divide the chia pudding into two jars.
Add frozen dragon fruit, frozen bananas, and a little bit of almond milk to a blender. I use red dragonfruit to give it that hot pink color. Blend the ingredients until smooth and thick. Pour the smoothie over the chia puddings. Then top with frozen blackberries and mint.
Serve the dragon fruit layered overnight chia pudding immediately cold.

- 1½ frozen medium chopped bananas
- ½ cup chopped dragon fruit
- ½ cup almond milk
- Frozen blackberries
