To make the overnight chia pudding, add chia seeds to a medium to large jar, then add almond milk, vanilla extract, and maple syrup. Stir with a spoon to incorporate all the ingredients. Place the jar in the fridge overnight.
When ready to serve, divide the chia pudding into two jars.
Add frozen dragon fruit, frozen bananas, and a little bit of almond milk to a blender. Blend the ingredients until smooth and thick. Pour the smoothie over the chia puddings. Then top with frozen blackberries and mint.
Serve the dragon fruit layered overnight chia pudding immediately cold.
