What better way to celebrate than with ice cream and sprinkles, right?
I’m turning 30 today, and it feels a little bittersweet.
I had wanted to celebrate, not necessarily turning 30, but all the things that I have managed to accomplish these last few years leading up to this birthday. So many things have happened.
But just three weeks ago, I lost my grandma, and suddenly everything changed. Again, thank you so much for all your support, for your comments ,and for the stories you shared with me in the post I wrote a couple weeks ago. It’s hard to imagine not seeing her over the weekend, not celebrating this birthday with her.
Instead, tomorrow we’re attending her memorial service and on Friday, the funeral. It’s been a difficult few weeks. And these last few days have been harder because I’ve been going through photos to put together a scrapbook for the memorial.
My aunt from Hong Kong came early to help with the funeral preparations, and she told me that my grandma talked to her about me. About how I was teaching people how to cook through writing and pictures, about how I got paid to create recipes but that she couldn’t understand how it’s possible since I don’t have to submit my food, just pictures. My grandma thought it was the best job in the world since I got to eat the food I make and get paid for it.The internet and blogging world was a mystery to her. <3
Anyway, I wanted to celebrate my birthday on my blog. I actually had this matcha green tea pistachio ice cream in the works for weeks now and planned to share it as my birthday post. Which is why I added sprinkles. I don’t normally have sprinkles on my ice cream, but I think I should. It makes everything so much more festive, don’t you think?
The funny thing is, tea has always been a big part of my life. It’s one of the biggest things my grandma and I had in common. Our love of tea. So, the timing seems somewhat perfect somehow.
This matcha green tea pistachio ice cream is simple yet packed full of flavor. The earthiness and slight bitter taste of matcha green tea powder, the sweetness of the condensed milk, and the nuttiness of the pistachios with a hint of salt. The balance of the flavors make this no churn ice cream a favorite.
In a large mixing bowl, add matcha green tea powder and just a little of the heavy cream. Whisk the matcha green tea powder and the heavy cream until the matcha green tea powder is completely dissolved and there’s no clumps of powder.
Add the rest of the heavy whipping cream and the condensed milk. Whisk until the cream starts to thicken. You can either use a mixer or do it by hand. I mixed by hand for several minutes.
Next, fold in the deshelled pistachios. I had to deshell them individually because that’s all we had at home. But it would have been so much easier if I bought them deshelled. Less work!
Pour the mixture into a freezer safe container. I actually bought an ice cream container since it seems I’ve been making ice cream more and more often, especially when I have leftover heavy whipping cream to use up before it expires.
Freeze the ice cream overnight.
Serve the matcha green tea pistachio ice cream with your favorite toppings.
